If you have time and desire it is better to visit several Christmas and New Year's European cities at once. There are special tours in which you can at once and Vienna before New Year trying fried chestnuts with hot mulled wine and Prague to see and meet the New Year in San Marco in Venice. The temperature everywhere is about 8-12 warm

Italy Spain Greece in my opinion is what you're looking for. It is as warm as in Russia in the spring. Though Greeks are orthodox, but they celebrate Christmas on December 25 according to calendar of new style. And after that comes the New Year.
