Ground chicken, a bun soaked in milk, a couple of mashed boiled potatoes + a slice of butter. I've read about potatoes recently and it's a great idea, aren't the cutlets tender but not crumbly?

I add some cabbage, Chinese cabbage is better, but not crucial. You will be surprised, but the cutlets become more juicy and tender.

I cut chicken meat in long thin strips, add turkey meat cut in half, onion, salt, pepper, garlic clove, breading as desired or in flour, they come out more tender without it, but breading is too coarse and takes hold without it, they come out more tender as steamed

minced chicken + oatmeal + onion + garlic + salt and spices, before grilling you wet your hands in a bowl with water, take in the palm of your hand and lightly form on a griddle with heated oil and fry until golden brown, you get tender and juicy.

chop minced meat with the hatchet, be sure to chop, add some flavor, but it's individual, and don't make them thick and round, the frying is even, like a steak

Mayonnaise

Bezizumi. I don't add any eggs, bread or potatoes. Grated zucchini on a coarse grater makes the cutlets juicy. Sometimes I add finely chopped coriander and basil greens.
