KHARCHO PO GRUSIN Ingredients: - Beef or lamb brisket 350 g, - rice 70 g, - animal fat 40 g, - onions 100 g, - garlic 8 g, - tomato puree 30 g, - tkemali sauce 25 g, - chmeli suneli 1 g, - fresh coriander 40 g, - water 1 l, - pepper, bay leaf, salt to taste. Preparation Cut beef or lamb brisket together with cartilages into 25-30 gr pieces, pour cold water and boil until half ready. Cut onions into small cubes, sauté them in fat together with tomato puree and add fat taken from broth. Put the soaked rice and fried onions into the broth and bring to readiness. Fill the soup with tkemali sauce, finely chopped coriander greens, minced garlic, dried herbs, pepper, bay leafs, salt, and simmer for 3-5 minutes. Serve in bowls or soup bowls. Mutton knuckle soup 600 gr mutton breast, 2 onions, 1 carrot and 1 parsley, 500 gr tomatoes, 2 paprika, 10 peppers, 1/2 head of garlic, 2 tablespoons of rice, 1 bay leaf and salt to taste. Chop a fatty lamb brisket crosswise and slice along the ribs. Fry with onions and roots in a deep pan, put it into a saucepan, pour cold water, salt and boil on a low heat. When everything is well-cooked, add the tomatoes minced through the meat grinder, as well as bell peppers and rice. Cook until the rice is fully cooked. As far as I know you just make rice soup and add adjika to it.

You boil kharcho with lamb, then you put rice to be thick soup and cook until ready, then add fried tomato paste and onions, add onion first, coriander and crushed garlic at the end and then serve. Season with sour cream.If you do not like tomato paste then do as follows - chop tomatoes separately chop garlic and onion together and fry to fried garlic and onions add tomatoes and fry again and for 5-10 minutes before the end of cooking all put it into the soup.

I understand everyone has their own recipe for kharcho. For me, it is a soup with tomato paste and garlic added to the rice.

Cook the broth on the lamb, add the rice separately fried onions + onions. Add cilantro, garlic, pepper.
