Except for the black stuff, everything in fish is edible. Not counting poisonous fish?

You shouldn't eat the gallbladder and swim bladder in fish. Gills with scales and bones with fins. The rest is all right. It's definitely not the swim bladder. It's either gills or caviar.

Pink salmon walk in the sea for two years and then return in August-September to die in the river in which they were born. Neither Japanese nor Americans eat spawning redfish. Pink salmon does not have a hump and predatory teeth, sea pink salmon has silvery scales, the meat is red delicacy - the Japanese catch it in long lines blocking the migration routes in the straits of Habomai, to us on Sakhalin it comes all torn up and with hooks. In Japan people eat only silver red fish and that only after heat treatment, wild fish is very expensive, poor people mostly eat mariculture salmon most of which is exported to their Japanese restaurants to feed white lovers of exotics.
