Nothing even comes to mind, from non-dairy products can you bake some kind of muffin or something with jam?

This lightweight cake is the perfect ending to any meal. They are easy to make and look very impressive. For New Year's Eve after an abundance of food, this light cake will go down a treat! Take 4 packs of ready-made jelly beans in different colors. In this case it is a jelly from kiwi, strawberry, orange and lemon. We make this jelly by reducing the amount of water indicated on the packet by about one-third if it says 2 cups, we pour 1.5. Pour it into different containers and leave to harden in the fridge overnight. We divide a can of pineapple chunks into the pineapples themselves and the juice. Bring the juice to a boil and dissolve in it a packet of 15 g of instant gelatin. Mix half a liter of yogurt, in my case peach yogurt of the lowest fat content, with dissolved gelatin and pineapple chunks. We cut the jelly into large cubes of arbitrary size and pour it into the yogurt. Stir everything and put into moulds. Let it freeze overnight in the fridge. Dip the moulds in boiling water for a second and turn them out on a plate. Strawberry Jelly Pour 4 cups of ready-made strawberry jelly into a deep bowl of no less than 4 liters. That is, I bought 3 packs of strawberry jelly, which says - add 2 cups of boiling water - and added to all three not 6, but 4 cups of boiling water, stirred and into the bowl. I put a smaller bowl on top, poured so much water for gravity into it that the jelly was displaced along the walls of the larger bowl. I put it in the fridge to harden for 3 hours. In this bowl I put half a cup of fresh strawberries and poured a glass of pineapple jelly, just the same diluted from the 1 pack. put it to harden. Now I made exactly the same yogurt-cream-peach jelly as in the previous cake and poured it over the frozen strawberries. I put it to harden a little and then covered the top with grated crackers, mixed with a spoonful of condensed milk. I left it to harden for the night. In the morning I turned over all the creation on a dish, put a towel soaked in boiling water on top and the jelly jumped out of its dungeon. That's what it turned out to be. It is so delicious - I am sitting here and munching it. I wish you the same! Next time I will replace the crumbs with biscuits, because they got a little scattered.
