Very tasty smoked red balky fish. Try it, you won't be able to drag it away.

been making it with calamari for a long time. And corn instead of peas. And cheese dressing instead of mayonnaise. It tastes better that way.

I like it best with chicken, but sometimes I also make it with beef.

Take chicken fillet instead of sausage, cut it into pieces and just fry it, without salt, not to the crust. And you will have an Olivier HAPPY!

Actually, crawfish necks and grouse are included in the composition of the olivier But if you don't have them and they are not available, then put doctor's, or whatever.

In the original recipe there is no sausage, there's grouse meat Sausage doesn't have to be doctor's, any boiled, with a minimum of fat. You can substitute with cooked meat or skinless chicken breasts Recently improvised, I just forgot to buy sausage, in the fridge there were smoked chicken thighs. It turned out very tasty.

In fact, you can put any meat, poultry, tongue, sausage not only boiled. It's up to your taste.
