as far as I know the meat is aged for 18 or 21 days. And you can not cook such meat for a long time it is very expensive meat, and you can safely eat it raw if you could eat it. I mean how soft it is. Specifically the technology is better to look on the internet. I think that such meat is better kept in the cellar wrapped in gauze if there is no special chamber, the refrigerator is constantly opening and changing the temperature is hardly a good idea?

do you have 100% confidence that your fresh and flavorful was not frozen in Argentina and defrosted once before cutting?
