usually pork but beef also works fine with borscht. my husband licks the pan and plates with fried fish. you can try it with smoked ribs - also very tasty

The best borscht is lean not poisoned meat. which is 99% hormones and antibiotics and what do you think? but if you have 100% homemade meat and you know that the owners were not fed compound feed and hormones for rapid growth. then beef is best. But better - trust me. WITHOUT meat. Take care of your health! If you don't want to take care of yours, think about the people you're going to feed them.

In borscht put beef pork lamb ham ham sausage and home-made sausage. Some borsch is made of chicken broth and goose broth. By the way you do not put any other meat in them. In the classic Ukrainian borscht ratio of beef brisket to pork - 2:1

I make it with chicken as it is the easiest. but in the recipes they write: pork.

There are different kinds of borscht. I prefer beef brisket chop or shoulder blade with gristle. If pork, I recommend rib eye brisket or shoulder blade.
